Pasta Il “ZigZag”

Those who know me, might think I’m referring to my favorite, yet not-nearly-enough-frequented local bar on the Pike St. hill climb.

But I’m actually referring to the stamp on one of my 100 year old antique pasta cutters…..

This beauty is made by the 1st pasta macchine manufacturer in the US,

Vitantonio, Columbus Ohio. 1906

She still works perfectly! -but we typically call the shape it produces  “Mafalda”

It’ll get tossed with a sauce of saffron, cauliflower, cream and pignoli (not quite ready for it’s photo session)

Also today:

Pappardelle, Alla Bolognese

Tagliatelle, in Salse Siciliana
