Raviolini del Tre Formaggio, and the First Asparagus of the Season!

Sure, it may not be Washington, but it is California Asparagus

…And, it is quite tender and delishious

…And, it is sauteed with garlic and shallots

….And, yesterday, being not only the first day of Spring, was also apparently, “National Ravioli Day”

(a totally made up holiday mind you, everyday should be ravioli day)

Well…… better late then never, I guess.
