Because we are not a huge pasta production company,
and don’t have a giant commercial pasta drying room,
the varieties and quantities of pasta we can effectively dry on our tiny scale is sometimes limited.
We are just the little guy. You can’t find us in grocery stores.
So we sometimes get excited about the little things,
like a limited supply of 20 inch long dry Mafalda!
