As some of you may know, I grew up in New Mexico.
The bright blue skies and vast mesa of the high desert will always feel like home to me. -But the thing that leaves the most memorable impression on most people who spend time there is
New Mexican food is a hybrid combination influenced by the earliest Spanish settlers (who were searching for the cities of gold) as well as the indigenous peoples of the region, and a very specific variety of chile that is native to the land.
It is not your typical “Mexican” food (though similar), and It is certainly not “TEX-MEX” It is it’s own unique thing, and it is my preferred comfort food.
