Making three Lasagne Di Verdure is no different than making one really,

its just more..

Lay down a layer of Cauliflower, Red Russian kale, Mama Lil’s Peppers and Salsa Pomodoro,

then pull a nice sheet of freshly made pasta over the top of it, like you are tucking a child into bed,

pour on a few ladles of Lemon and Asparagus Velouté 

and top with another sheet of pasta….

then repeat the process a dozen or so times across the three pans of Lasagne.

Lasagne productionand presto, you’ve got 72 orders of lasagne…

-a little less than a third of the pasta we will need for today’s lunch service!

So we made quite a bit of these today as well…..
