The tomato is quite the traveler of the culinary world.
The earliest discovered cookbook with tomato recipes was published in Naples in 1692,
Most people dont realize, tomatoes originated here in the Americas,
and were then brought back to Spain sometime in the early 1500’s
eventually finding their way to southern Italy,
where the Italians developed and perfected the way to make
(really good tomato paste) dried in the heat of the Sicilian sun.
-and that very tomato conserva, flavor and colors our fusilli,
-all the way back here in Seattle today.
