“Candele” pasta (candles) , typical of southern Italy, are long tubes of pasta (usually about 18 inches!)
they are often broken by hand into a more manageable size before being thrown into the pot of water,
Layering them with a mushroom bechamel, pomodoro and ricotta and then its off to the oven!
I’m fairly certain, this will make the “things that didn’t suck in 2013” list!
