Squid Ink Tonnarelli with Salsa Verde!

Transforming the pasta:

Before the cuttlefish ink is completely worked in, it has the look of Granite,

-I wish there was a way to capture this look, and have the pasta have the right texture and tooth

But to develop the gluten, and the tooth, it gets worked..

IMG_1542 And worked some more, until it gets to that perfect texture.

IMG_1544then there’s nothing left to do, but cut it, cook it, toss it with some salsa verde …and enjoy
