Transforming the pasta:
Before the cuttlefish ink is completely worked in, it has the look of Granite,
-I wish there was a way to capture this look, and have the pasta have the right texture and tooth

But to develop the gluten, and the tooth, it gets worked..
 And worked some more, until it gets to that perfect texture.
then there’s nothing left to do, but cut it, cook it, toss it with some salsa verde …and enjoy
