Before most of us have had our first cup of coffee…

In the long shadows of the morning light,

I start my morning with the ravioli pin and two sheets of duck egg pasta, the size of bed-linens.

pressing little quilted squares

cutting and trimming

tiny little parcels of cauliflower and saffron puree,

To be tossed with oregano infused oil, and parmesan..

What a delight.

Now coffee.

Also today:

Lasagnette, with mushrooms and balsamic

Gnocchi, with spicy eggplant-tomato sauce
