A classic that needs no further introduction…..

if I were pressed to tell you one detail, that you can’t glean from this photo, it is that this bolognese sauce is made of 100% local, tender, naturally raised pork.  The pig came from a farm that takes great care in nurturing their pigs, allowing them to forage for fallen apples, feeding them fresh whey, and organic vegetable scraps.

I would love to tell you the name of this farm, but because of that pesky government, even with as much love and care they give these pigs, they cannot “legally” distribute to restaurant.

nor can I serve it….

uhm, …..just kidding….ah….I mean…..the pork is totally from Costco. -yep.
