Well Seattle…. see, a little time off from each other can do wonders.

I’m glad you took my last letter seriously, and made a terrific effort to kick this “Rain Habit” of yours

-I will bask in your sunshine, for as long as it lasts, and never speak again of your little “incident”

(until your next relapse)

Today,

Capellini, with Caramelized Onion and Anchovy Sauce!

One of my favorites examples of the magic that is La Cucina Povera.

-using the one ingredient people tend to forget makes such a big difference.

-an ingredient that can transform tough meats into tender, melt-in-your-mouth bites of heaven.

-an ingredient that can render offensive sulfuric aromas defenseless , caving to the caramelized sugars of an onion.

-an ingredient  that we, in our busy lifestyle, seldom give its proper appreciation.

the ingredient of Time.
