One of my favorites examples of the magic that is La Cucina Povera. 

-using the one ingredient people tend to forget makes such a big difference.

-an ingredient that can transform tough meats into tender, melt-in-your-mouth bites of heaven.

-an ingredient that can render offensive sulfuric aromas defenseless , caving to the caramelized sugars of an onion.

-an ingredient  that we, in our busy lifestyle, seldom give its proper appreciation.

the ingredient of Time.

Sedani, with braised beef and pork sugo

Roasted Piquillo Pepper and Feta filled Ravioli, tossed with kalamata olives and scallions
