Tagliarini, with Roasted Chickpea and Walnut Pesto !

One of my favorite snacks, that I almost never remember to make are:

Roasted Chickpeas:

Deliciously addictive on their own, especially when accompanying a ice cold Birra,  I thought the nutty crunch might lend itself to a few other applications.

Results are in:…. tasty!   complementing the toasted walnuts in our pesto beautifully,

As a matter of fact, they have such a nice roasted-nutty flavor, -if you were unfortunate enough  to have a nut allergy, I suspect you could substitute them wherever nuts were called for!

Also today:

Pappardelle, with spicy pancetta-pomadoro sauce

Maccheroni, with braised pork sugo
