Pappardelle alla Bolognese
Aaaaahhhh yeah! This is my kind of classic — slickery, wide pasta twirled with a slow-simmered tomato and meat sauce and showered with Parmiggiano. Mangia!
Fat little cavatelli lovingly tossed with a luscious, thick sauce of toasted pine nuts, sultanas, Sicilian oregano, anchovies and chili flakes. Hot and sweet and oh-so-happy-making!
Maccheroni al Formaggio
I should warn you now: if you’re feeling low on willpower, you should stop reading. Really. You’re still with me? Ok! These little hand-cranked pastas are swimming in a sauce of roasted garlic besciamella swirled with piles of Parmeggiano.
